Potassium Metabisulphite contains 52 to 55% available sulphur dioxide. It kills certain bacteria and inhibits the growth of most wild yeast. It also helps eliminate both free chlorine, and the more stable form, chloramine, from water solutions (i.e., drinking water from town supply). Potassium Metabisulphite allows brewers to protect against wild yeast and bacteria without affecting flavour.
The three main properties are:
- An antiseptic against yeast and bacteria
- Antioxidant activity
- A role in increasing the solubility of polyphenols
Potassium Metabisulphite is easier to use if previously dissolved in a wine/water mix (40 % weight by volume). For example : 400g of Potassium Metabisulphite in 1 litre of water provides 200g of sulphur dioxide in solution.
As an alternative, Campden Tablets provide Potassium Metabisulphite in tablet form.
